Pork 

Our Pork is from Byron Bay, and feeds on natural grain, barley and molasses to give a unique marbling

  • 12-Hour Byron Bay Pork Boston Butt, Pulled. 24 Hour Brined Boston Butt, Rubbed with French’s Mustard, B.B.B Signature Pork Rub Blend

  • 8-Hour Byron Bay Pork Spare Ribs. That’s that Kansas Style Spare Rib you see all over YouTube. We use our B.B.B Signature Pork Rub, Smoke & Time but glazed in our own Barbeque Sauce to make it Sweet, Savoury and Sticky. 

  • 8-Hour Smoked Pork Burnt Ends... you know this is the most wanted part of the pork.  

Chicken

Using some of the best Free Range Chicken in Australia, we brine for 12-Hours, and smoked until tender. If it’s the crunch of the crisp skin you want, we have you covered! 

All our Chicken is seasoned in our Signature B.B.B Chicken Seasoning 

  • 6-Hour Smoked Legs, Wings, Breast, Drumsticks and Maryland all available.

Lamb 

Showcasing White Pyrenees Lamb from Victoria. Fed on lush pastures of the Pyrenees region and crushed grains to give a natural marble and beautiful flavouring. All lamb is served with a beautiful fresh vibrant Salsa Verde or Gremolata seasoning to enhance the flavours and boldness 

  • 12-Hour Smoked Lamb Forequater, Rubbed with English Mustard, and Seasoned with our B.B.B Simple Seasoning 

  • 8-Hour Smoked Lamb Ribs, Sweet, Succulent and perfectly balanced, these ribs are dressed with a pomegranate molasses shrub throughout the cook. 

Turkey 

Free range Fresh Turkey, Brined for 12-Hours, Smoked Until Tender, Moist & Big! All our Turkey is seasoned in our Signature B.B.B Simple Seasoning

Allergy Conscious?

In the initial stages of your event, it’s best to mention as much information as possible, this way we can make it as smooth as possible to allow you to focus on your special day. Put it this way, the more we know the more nobody needs to worry.

All our meats are gluten-free, as standard and gluten-free bread can be provided.  Please bear in mind that the kitchen our food is prepared in does contain traces of gluten and we will take every step to minimise this contact however we cannot guarantee that there are no traces.

Payment Methods

As a small company, we're all about making you feel like the guest of honour! Let's cook up a menu that gets your taste buds dancing and craft a run sheet so smooth, it's practically choreographed. Once we've got you grinning from ear to ear, it's time to seal the deal with your John Hancock. To lock in the date, we'll need a 50% upfront deposit, pronto! This ensures we can work our magic with our low and slow cooking style.

All we ask is final numbers, and the remaining balance fully paid via EFT which is non-refundable within 7 days before your event. Lastly, we just need your guest’s dietary requirements 3 days out. Payment is via EFT, and remittance can be sent over if you need it.
